List of ingredients

For making the cookie dough:

  1. Any all-purpose flour – 2 cups or 240 grams
  2. Quick oats – ½ cup
  3. Granulated sugar – 1/2 cup or 100 grams
  4. Brown sugar – ¾ cup or roughly 150 grams
  5. semi-sweet chocolate chips – 1 cup
  6. Plain butter – 1 cup or approximately 226 grams, preferably unsalted and softened
  7. Whole egg – 1 large
  8. Simple vanilla extract – 2 tsp. or 10mL
  9. Baking powder – ½ tsp.
  10. Baking soda – ¼ tsp.
  11. Kosher salt – 1 ¼ tsp.
  12. For making the Cookie Layer:
  13. Any chocolate sandwich cookies, e.g., Oreos – 18 Nos.

For making the Brownie Layer:

  1. All-purpose flour – ½ cup or 60 grams
  2. brown sugar – ½ cup or 100 grams
  3. granulated sugar – ½ cup or 100 grams
  4. vanilla extract – 2 tsp. 10mL
  5. Whole eggs – 2 large
  6. semi-sweet chocolate chips – ½ cup
  7. cocoa powder – 2/3rd cup or 65 grams
  8. unsalted butter melted – 3/4 cup
  9. Espresso powder – 2 tsp.
  10. Baking powder – ½ tsp.
  11. Kosher salt – ½ tsp.


Instruction to prepare the Cookie Dough

  1. We need to mix butter and sugar. So you can do it using a whisker or a mixer. Mix it starting from a slow speed and gently work your way to high speed for 2 minutes. Then add one whole egg and vanilla and continue the beating for another 1 -2 minutes or until it’s appropriately combined.
  2. Take another bowl and add the contents of the dough: flour, baking powder, baking soda, and salt. Mix them well together using a wooden spoon or spatula. Once the dry mix is ready, add the flour mix we prepared earlier and beat the contents well. Do it slowly to ensure an even blend. This will take 2 – 4 minutes, depending on speed.
  3. Then add the chocolates into the mix little by little until they are finished, and finally add quick oats the same way. Ensure all the way that you do not overbeat the dough mix.
  4. Cut the dough into two equal parts. Take a baking pan and line it with foil. Grease the foil with a thin layer of butter or oil. Now take one-half of the dough and spread it evenly on the foil. Ensure the coating is evenly spread. Keep this pan aside and send the rest of the dough to the fridge.

Instruction to prepare the Cookie Layer

Collect all the Oreos and place them carefully on the dough in the pan. You can break the cookies to fit the entire surface of the dough. Use additional cookies if required.

Instruction to prepare the Brownie Layer: Set the oven to preheat at 350 degrees Fahrenheit.

Step 1

Take a medium-size bowl and add all the dry ingredients like flour, cocoa powder, espresso powder, and baking powder. Give them all a good mix until they are well combined.

Step 2

Send the butter to the microwave for 30 seconds to melt entirely. Then take another bowl and add the wet ingredients like butter, sugar, eggs, and vanilla to it. Mix all these contents well to make the topping for the brownie.

Step 3

Slowly add the dry mix we prepared earlier into the wet mixture. Add it little by little and mix well each time, taking special care not to form lumps. Also, ensure there are no streaks in the mix. Bars indicate that the contents have not mixed well.

Step 4

Finally, add the chocolate chips to the preparation and mix them well. The brownie batter is now ready.

Step 5

Slowly pour this mix over the flat dough spread on the baking pan. Use a spatula to spread it evenly over the dough and cookies.

Step 6

Please send it to the oven set to 350 degrees Fahrenheit and let it bake for up to 35 to 40 minutes.

Step 7

Both of them should come out clean without any dough sticking to their surface. Use the wooden pick or the knife method to check if the brownie is ready. Let it bake for another 3 minutes, and check again if you see the dough. It should be done by 40 minutes max.

Please take out the pan once it’s done and set it on a wire rack to cool down on its own.

Cut it only once it’s completely cooled down. Else, it will tear when you are trying to cut. The moisture in the brownie has to evaporate, and the brownie has to harden a bit before slicing. Cut them into desired shapes and sizes.
