- Quick oats – ½ cup
- Granulated sugar – 1/2 cup or 100 grams
- Brown sugar – ¾ cup or roughly 150 grams

- Any chocolate sandwich cookies, e.g., Oreos – 18 Nos.
For making the Brownie Layer:
- All-purpose flour – ½ cup or 60 grams
- brown sugar – ½ cup or 100 grams
- granulated sugar – ½ cup or 100 grams
- vanilla extract – 2 tsp. 10mL
- Whole eggs – 2 large
- semi-sweet chocolate chips – ½ cup
- cocoa powder – 2/3rd cup or 65 grams
- unsalted butter melted – 3/4 cup
- Espresso powder – 2 tsp.
- Baking powder – ½ tsp.
- Kosher salt – ½ tsp.

Instruction to prepare the Cookie Dough
- We need to mix butter and sugar. So you can do it using a whisker or a mixer. Mix it starting from a slow speed and gently work your way to high speed for 2 minutes. Then add one whole egg and vanilla and continue the beating for another 1 -2 minutes or until it’s appropriately combined.
- Take another bowl and add the contents of the dough: flour, baking powder, baking soda, and salt. Mix them well together using a wooden spoon or spatula. Once the dry mix is ready, add the flour mix we prepared earlier and beat the contents well. Do it slowly to ensure an even blend. This will take 2 – 4 minutes, depending on speed.
- Then add the chocolates into the mix little by little until they are finished, and finally add quick oats the same way. Ensure all the way that you do not overbeat the dough mix.
- Cut the dough into two equal parts. Take a baking pan and line it with foil. Grease the foil with a thin layer of butter or oil. Now take one-half of the dough and spread it evenly on the foil. Ensure the coating is evenly spread. Keep this pan aside and send the rest of the dough to the fridge.

Collect all the Oreos and place them carefully on the dough in the pan. You can break the cookies to fit the entire surface of the dough. Use additional cookies if required.
