Scrambled Egg Tacos Recipe


For the longest time, I had been on the lookout for the best way to start my day. Typically, I would run a few miles after waking up but I had not figured out the best way to break my fast. Then came breakfast tacos and I’ve never looked back. These breakfast champs are not only yummy but also filling and easy to prepare. You can try them now and your days could never start better.

These scrambled egg breakfast tacos are an easy option for breakfast. Alternatively, they can be a brunch that everyone will love! We chose to make our eggs as soft scrambled eggs on corn tortillas because we feel corn tortillas add more flavor and create a more authentic taco. In our recipe, we added cilantro and onion as garnish topping to keep things simple but there are many variations to this recipe to add some more flavor! Ingredients

  • 6 eggs
  • salt and black pepper
  • 1 tablespoon butter
  • Nonstick spray for tortillas
  • 4 corn tortillas, warmed
  • 1 ounce three cheese Mexican blend, shredded (1/4 cup, this is optional)
  • 2 tablespoons fresh cilantro
  • ¼ cup of finely chopped onion

What You Will Need

  • Stovetop Flat top to cook tortillas (or 12-inch skillet pan)
  • Medium Bowl
  • Fork to mix eggs
  • Spatula
  • Taco Holder (optional)

Let’s Take It Step by Step

1. In a medium bowl, beat the eggs with ¼ teaspoon each salt and pepper
2. Heat the butter in a large nonstick skillet over medium-high heat.
3. Cook the eggs, stirring with a spatula, until set but still soft. Roughly 2 to 3 minutes.
4. Divide the eggs among the tortillas evenly.
5. Top tacos with cilantro and onion (cheese, avocado, and pico de gallo are all optional garnish/toppings as well!) Remember, you have the freedom to try anything.

*You can cook eggs longer for a more well done/ scrambled hard egg
*Substitute Flour Tortillas
*Adding Guacamole scoop
*Add Tri-Blend Mexican Cheese

*A teaspoon of Pico de Gallo on each taco would be welcome
*Add black beans for a Huevos Rancheros feel

*Take eggs off the burner to cook slower to make your eggs extra soft. (We love our eggs this way!)
