Pineapple Pico de Gallo Salsa Recipe

However, there is another reason why it is a staple in loads of households. It is easy to prepare, and that is an understatement. When you throw in pineapple to the mix, the flavor is rich and memorable to your taste buds.

This Pico de Gallo salsa recipe makes me extremely excited for summer and backyard BBQs. However, it really is a perfect recipe any time of the year. Pico de Gallo is just a fancy way to say fresh salsa. True to this, the recipe is very light and fresh. If you are thinking what I’m thinking, chips and Salsa are a staple to have in your fridge or as an appetizer at a party. Using only one bowl, it is a very easy recipe to make and enjoy! Thankfully, you do not have to labor to make something easy and yummy.

If you want to make more servings, you can adjust the quantities accordingly.

Ingredients

6 ripe plum tomatoes
1 cup fresh pineapple, finely diced (about ½ of a whole pineapple)
2 jalapeños, finely chopped (remove seeds if you are not a fan of spicy)
2/3 cup fresh chopped cilantro
2/3 cup red onion, diced
2 garlic cloves, minced
1 tablespoon vegetable oil
Juice of one lime
1/2 teaspoon salt

What You Will Need

  • Cutting Board
  • Knife
  • Mixing Bowl
  • Lime Juicer (or hand squeeze)
  • Mezzaluna Chopper (or use knife/scissors)
  • Spoon to mix
  • Serving Bowl

Let’s Take It Step by Step

1. Prep all of the ingredients by first dicing plum tomatoes, onions, pineapple finely.
2. Finely chop jalapenos and remove seeds as needed for less/more kick!
3. Chop fresh cilantro with Mezzaluna Chopper or knife
4. Mince 2 garlic cloves
5. Add salt, lime juice, and oil into mixing bowl
6. Mix all ingredients well and let sit to let all ingredients combine.
7. Serve with tortilla chips.

Variations and Options

*You do not need to use cilantro if you are one of those who think cilantro tastes like soap! You can go for the spice substitutes and choose your favorite.
*I added in more jalapenos as I like a spicy recipe. You’re welcome to pass if you are not a spice person.
*You can leave out the pineapples if you would prefer a traditional pico de gallo
