Strawberry Ice Cream Recipe

Ingredients

  • Fresh strawberries – 2 cups (which is 6 ounces or 170 grams)
  • Granulated sugar – 1 cup
  • All-purpose cream or heavy cream – 2 cups (16 ounces or 450 ml)
  • Milk
    • Whole milk – 1 cup OR
    • sweetened condensed milk – 14 ounces (1 can/ 400ml) cold (fat-free or regular)
  • vanilla extract – 1 teaspoon (optional)
  • Honey – 1 teaspoon (optional)
  • Lemon juice – 1 – 2 teaspoons (optional)
  • Salt – to taste

Instructions

Step 1

We always mention this in every recipe. Fresh strawberries come with hidden dust and dirt from the fields. So wash them several times in a colander scrubbing them with your hands. After 4 -5 rinses, cut the white fruit stem and the green leafy part off.

Step 2

Chop all the strawberries rough. The size depends on the preference. Larger sizes make the recipe appear more natural.

Step 3

Take a large bowl and add all the strawberries to it. Then add the sugar and lemon juice. Honey is optional and will only enhance the taste. Mix it all well and let it sit for some time. The strawberries will macerate and release all their juices because of the sugar. This should take around 15- 20 minutes. Once the strawberries start releasing sugars and acids, they also become softer in the process.

Step 4

After this, use a potato masher to mash the strawberry mix thoroughly. Ensure there are no pieces left in the mix. While you can also use a food processor to puree it, the result will not look natural. So you can choose to blend if you want, but the mashed strawberry pieces taste amazing in the ice cream.

Step 5

Add the entire mixture to the ice cream maker machine. Add the rest of the ingredients: heavy cream, vanilla extract, and sweet condensed milk.

Step 6

Follow the ice cream manufacturer’s instructions on running the machine and making ice cream from the contents. The device will churn the ingredients, mix them and make them into ice cream in the end. This will take 20 to 40 minutes, depending on the manufacturer and machine.

Step 7

The ice cream is ready once it is done in the machine. You have the option to have it immediately or send it to the freezer to make it thicker and colder. It should take 3 – 4 hours for the ice cream to freeze completely in the freezer.

Step 8

The ice cream is soft and creamy, and you can scrape it directly from the storage box. To store in the freezer, use an air-tight container. This recipe can last up to 2 months in the fridge.

Tips For Making Strawberry Ice Cream

Tip 1

While the store may be out of fresh strawberries, you can settle for the frozen ones though not recommended. The benefit of the frozen ones is that they usually come clean, so you will save the trouble of cleaning them. Just ensure you let the frozen berries thaw entirely and naturally. 

Tip 2

Dried strawberries can also be used, but then use whole milk instead of condensed milk and increase the volume of whole milk by ½ cup to 1 cup.

Tip 3

Strawberries are berries, and so you can, and you must try experimenting with various other berries too. You can use blueberries or even different fruits. Substitute the fruit, but the recipe remains the same. Just adjust the amount of sugar needed per the fruit, and you should be good.
