How to Make Strawberry Cake


Fresh strawberries – 500 grams that are washed, cleaned, and hulled.

List of all the wet ingredients

  • Plain yogurt – 1 cup, preferably fat-free and unsweetened (you can use Greek yogurt, or just a plain one will be fine)
  • Eggs – 2 large ones, approximately 50 grams each
  • Vanilla extract (or essence) – 1 teaspoon
  • Lemon rind – 1 tbsp grated fresh from a lemon
  • Sugar – 1 cup – preferably caster/superfine best (but we can work with coarse as well)
  • Oil – 1/2 cup canola or vegetable oil
  • Lemon juice – 1/4th cup (from 1 large lemon)

  • Extra strawberries were cleaned and sliced.
  • Baking powder – 4 teaspoons (else 1 1/4th  teaspoon baking soda)
  • Flour – 2 1/4th  cups (choose any from plain or all-purpose flour)
  • Salt to taste

Ingredients for the serving

  • A small amount of icing sugar/ powdered sugar for dusting
  • Whipped cream for the topping


  1. Let the oven preheat to 200° Celcius or 390° Fahrenheit.
  2. You will need a cake pan for baking the cake. Take any cake pan which is at least 9 inches. So take any cake pan and line it with baking paper or parchment paper. Slightly grease the cake to prevent it from sticking to the bottom/ sides.

For preparing the strawberries

  1. Take fresh strawberries and wash them under running water 4 – 5 times to remove any dust or dirt. Because of the texture, it’s easy for dust to stick to strawberries, and you do not want any of it to go into the cake.
  2. Once washed, cleaned with a dry towel, a de-hull them. This process removes the green leafy top and the tasteless white part underneath it.
  3. Dice a part of the strawberries into approximately 1″ pieces. This is for use inside the cake, and you should have 1 cup in the end, which should be around 1/3rd of the whole strawberries you have.
  4. Now for the last part, the topping, slice the remaining strawberries in half.

For preparing the cake

  1. Take a large enough bowl and pour all the wet ingredients into it. Take a whisk or use a mixer to whisk all the ingredients until they are well incorporated. This should take just 1 -2 minutes.
  2. Add the dry ingredients collectively and slowly to prevent any lumps. Add a small amount, whisk and add again. Repeat until you use up all the ingredients. You can also mix all the dry ingredients well in another bowl before mixing them with the wet ingredients. This will ensure the mix is well prepared.
  3. Here comes the magic: empty 1/3rd of the contents into the cake pan. Scatter the diced strawberries over the surface, and make it smooth. Pour another 1/3rd of the wet mix and spread another layer of strawberries.
  4. Finally, pour the remaining batter into the cake pan and use a knife to smooth out the surface and make it look even and excellent.
  5. Over the top surface, place the halved strawberries one by one carefully, ensuring the fruit face is outwards.
  6. Let it bake in the oven for 40 – 50 minutes. Use a toothpick, fork, or knife method to check if the cake is ready after 40 minutes. If not, let it bake for another 5 minutes before checking again.
  7. Once it’s done, take the baking pan out and let it cool down naturally for 10 – 15 minutes. Then send it to the cooling wire rack for further cooling.
  8. You can serve this slightly warm or room temperature or cold as well. Before serving, do ensure to dust it with icing sugar to give it that dreamy, magical look. You can serve this with ice cream too.
