BBQ chicken nachos are the go-to dishes in our household. What can I say, they are quick, they are easy, they are Nachos and they’re whatever you want them to be. Also, they make a great snack, a party appetizer, or a weeknight dinner!

Nachos have always been my “I’m too tired to cook after a long day of work, errands and household chores” dinner. We have all been there, am I right? You have spent your entire day working, running errands & maintaining your household, but you are so tired, and you need a quick meal to throw together for your family. This is it, and these ingredients are staples in our house- so give this quick and easy nacho recipe a try for your family!

Nachos have it all; protein, carbs, veggies, and – the essential ingredient, CHEESE! They are fully customizable to suit a solo diner or a small cocktail/dinner party serving appetizers and drinks! What more could I ask for?

Ingredients

Tortillas, try our Air Fried Tortilla Chips

  • 2 Cups shredded chicken
  • 1, 10-ounce Jar of BBQ sauce, my favorite is Mango Chipotle BBW from Trader Joes
  • 1 pound of shredded pepper jack, cheddar, Monterey jack cheese. *We like to use a combination of all the cheeses. If you only have one blend that is perfectly fine.

For the Salsa

  • 3 diced, large avocados
  • 1 finely diced, small red onion
  • 1 diced tomato
  • 2 tablespoons chopped fresh cilantro
  • Grated Zest and Juice of one lime
  • Kosher Salt & Freshly ground black pepper

For the topping:

  • shredded lettuce
  • sliced jalapeños
  • salsa
  • pico de gallo
  • queso
  • sour cream
  • avocados, or guacamole.

What You Will Need

  • Avocado slicer
  • Cheese Grater
  • Amazon Basics- Silicone Baking Sheets
  • Baking Sheet Pan
  • Juicer

Let’s Take It Step by Step

  1. Preheat the oven to 375º- move the oven rack to the top position in the oven.
  2. Arrange the tortilla chips on a large rimmed baking sheet in a single layer. In a small bowl, combine the shredded chicken with BBQ sauce until mixed thoroughly. Top the tortilla chips with the BBQ chicken, spreading evenly. Add the blend of cheeses to cover the tortillas. Bake until the cheese is bubbling and the edges of the chips are crispy for about 22-25 minutes.
  3. Meanwhile, make the salsa. In a large bowl, gently toss the avocado, red onion, tomatoes, cilantro, lime zest, lime juice, and salt & pepper to taste.
  4. Remove the nachos from the oven and top with shredded lettuce and fresh cilantro. Next, add the avocado salsa, a few dollops of sour cream, and jalapeños to the top.

Variations and Options

Ways to Adapt this recipe? As I said, you can play with it to make what feels hearty.

All of these ingredients are customizable. If you are craving for variety in your nachos or don’t have the exact toppings, here is a list of suggestions to swap out some ingredients.

Cheeses: For cheeses with a little heat, try Monterey, pepper jack, or habanero cheese.
Velveeta Cheese sauce or Cheez Wiz Sauce: If you are going to use a canned cheese sauce, add it at the end of the bake time once the shredded cheese has melted, or you will have soggy chips.
Protein: Shredded Chicken- if grilled fresh chicken breast isn’t an option (or you need to save some time), use canned chicken breast.
Steak, brisket, grilled tofu, seasoned pork are also great substitutions.
Veggies: Shredded lettuce, jalapeños, red/green peppers, raw onion, pico de gallo, salsa verde can do a great job.

What We Suggest Pairing it With

This recipe pairs well with Avocado Salsa, homemade Queso, or the perfect Margarita.

Helpful Hints

The biggest mistake when making nachos at home is having soggy nachos and nobody likes soggy chips. You can avoid this by using a large baking sheet and arranging the tortilla chips in a single layer. Also, sprinkle some shredded cheese on the chips first before putting your protein/meat/sauces directly on the chips. This creates a little buffer to hold the texture of the chips for as long as possible, while the cheese bubbles and toppings are added.

If you want your nachos a little spicier, try adding whole fresh slices of jalapeños & do not remove any of the seeds.
